8 Ingredient Gluten Free Cornbread

When I set out to try a cornbread recipe with our Organic Stone Milled Cornmeal, I knew it would have to be a gluten-free recipe. I have found that a gluten-free lifestyle has greatly improved my gut health, and my overall sense of well-being.

Here at The Smokin Oaks Organic Farms Market, we don’t promote a gluten-free or grain-free lifestyle, although many of us on staff do practice these types of alternative diets. What we do promote are clean ingredients- free of enriched flour that is packed with harmful folic acid, and free of niacin that may be linked to the inability to properly digest gluten.

The recipe I found from “Gluten Free On A Shoestring” was easy, and met all of my requirements. This recipe only calls for 8 ingredients, which happen to be ingredients that most of us always have on hand! This is my version of her recipe including the ingredients I had in my fridge, which produced a moist and flavorful cornbread.

Old Fashioned Gluten Free Cornbread

Yields 8 servings

Ingredients:

2 cups Smokin Oaks Organic Farms Stone Milled Cornmeal

2 tsp Baking Powder

1 tsp Baking Soda

1 tsp Kosher Salt

1 1/2 cups Plain Greek Yogurt (at room temp)

4 tsp Salted Butter (melted)

1 Organic Farm Egg, beaten (at room temp)

4 Tbsp Organic Honey

Instructions

  1. Preheat your oven to 350. Grease a 9 in bread pan and set aside. I used bacon grease.

  2. In a large bowl, place the dry ingredients - cornmeal, baking powder, baking soda, and salt- and whisk to combine. In a separate bowl, mix yogurt, butter, honey and egg. Whisk to combine.

  3. Create a well in the center of dry ingredients and pour in the wet ingredients. Mix until combined. Mixture will be thick, but not dry. Pour the mixture into the greased pan and smooth the top with a spoon or spatula.

  4. Bake for 20 minutes. Check to ensure that the cornbread is cooked through by running a knife in the center to the bottom. It’s ready when it comes out clean. If not ready, return to oven for 10 more minutes or until the top is lightly browned.
