Cinco de Mayo Breakfast Hash

This recipe uses leftovers (if you have any!) from this Pork Shank Carnitas recipe.

Ingredients:

  • Pork Shank Carnitas (recipe here)
  • 1 small - medium sweet potato, diced
  • 1 egg
  • additional taco toppings of your choice (beans, peppers, salsa) 
  • fresh cilantro

Toss some diced sweet potatoes in a skillet with olive oil, turning occasionally until crispy.

In a separate skillet, fry an egg.

Once the potatoes are crispy, add your leftover carnitas and any taco toppings you want in until they are warm.

Top with the fried egg and some fresh cilantro, if that's your style.

This is easy to customize and hard to mess up.  Enjoy this with your coffee the morning after your Cinco de Mayo celebration.
