Bacon Wrapped Jalapeños

- 12 pieces Smokin' Oaks Organic Farms Bacon
- 6 jalapenos
- 4 oz goat cheese (we used local favorites, Nobels Goat Cheese)
- 1 tbsp honey (local)
Preheat oven to 375 and line a baking sheet with parchment paper. Allow goat cheese to soften while you cut the jalapenos lengthwise + remove seeds + scoop out pith. Be sure to leave the stems of the jalapenos intact, you’ll want someone to hold on to while eating.
Mix goat cheese and honey. Using a small spoon scoop the goat cheese mixture into the halved jalapenos. Wrap each half in one piece of bacon beginning at the stem and spiraling to the tip.
Place bacon wrapped jalapenos on parchment lined baking sheet and place on the middle rack of the oven for 15 minutes.
After 15 minutes remove backing sheet and move oven rack to top level. Place sheet on top rack and turn on broiler to 500. Bake at 500 for ~4 minutes or until bacon has browned. Keep an eye on your bacon at this stage. Broilers can be tricky.
Allow a few minutes to cool before serving.
