Bacon Goat Cheese Jalapeno Burger

  • by William Kruse

Ingredients:

1 lb local, pasture raised ground beef

1 jalapeno (more if you like it spicy)

1 lb bacon ends or bacon bits

2.5 oz goat cheese (we used Noble’s)

1 egg

1 tsp garlic powder

Salt and pepper to taste

Directions:

In a cast iron skillet render bacon ends until mostly cooked. Drain grease and let cool slightly. Add ground beef to mixing bowl. Finely chop 1 jalapeno, add to ground beef along with egg, cooled bacon ends, garlic powder, salt and pepper. Mix ingredients together (clean hands work best here). Crumble goat cheese and toss into ground beef mixture until combined being careful to not over mix.

Shape mixture into patties (~4) and cook on grill or in cast iron skillet. Allow to rest before serving on a warm bun or lettuce wrap.
